Maison Joia grew from the meeting of Julien and Laetitia Pilati: two sensibilities, united by a love of welcoming guests.

Julien creates contemporary French cuisine guided by the seasons and the ingredients. Laetitia carries the story into the dining room through wine, thoughtful pairings and a personal attention to every guest.

Together, they have made their house a place of pleasure, generosity and shared discoveries.

Laetitia brings a deeply personal love of French gastronomy and the art of hospitality to Maison Joia. Her background in luxury events shaped her ability to create occasions that feel both carefully considered and effortless.

As sommelier and host, she introduces guests from around the world to the wines, traditions and people that make French dining so distinctive.

Julien

Roots in Champagne

Julien grew up in his parents’ kitchens at the Auberge du Connétable, beneath the château of Fère-en-Tardenois. His childhood was shaped by the craft of cooking, family traditions and the work of his godfather, chef Patrick Michelon.

The painters working near the château ruins awakened his interest in art and texture. Early life among cooks and artisans instilled a lasting respect for honest ingredients and the people who produce them. Visits to the family chocolatiers, Maison Pilati in Roanne, added another vivid memory: the scent of warm praline beneath the marble wheel.

Today, those influences find their expression in his own contemporary French cuisine at Maison Joia.
